This is our favorite banana bread recipe. It comes from "Edwardian Cooking- The Unofficial Downton Abby Cookbook" by Larry Edwards. I have been making it for years and just love it. It is not overly sweet, it allows the banana to be the star of the bake, and it is moist. Do recommend enjoying it as a snack accompanied with tea or coffee.

Preheat oven to 350° F. Line a 9 x 5 loaf pan with parchment paper.
In a large bowl, whisk together the wheat flour, baking powder, baking soda, salt, and spices.
In a mixer with the whisk attachment, beat the bananas, brown sugar, olive oil, egg, and vanilla until smooth and creamy. This will take a few minutes as you want the banana to break down.
If you do not have a stand mixer, a hand electric mixer is the next best option but a metal whisk will also do. Both options will take longer than the stand mixer.
Add the flour mixture, in two parts, and breat on low speed until a batter is formed.
Stir in walnuts (or any other nut you choose).
Spoon the batter into the prepared pan, and level it.
Place into the oven and bake 50 minutes (or until the sides break away from the pan and a toothpick comes out clean).
Remove from the oven and let the bread cool in the pan for 15 minutes
Remove from the pan to a wire rack and let cool until ready to slice and serve.
