Gooey ginger cookies with crunchy sugar coating. The perfect warming cookie for wintertime. Was inspired to post this recipe from a conversation I had on a discord chat.
Preheat oven to 375°F. Line a baking sheet with parchment paper or a silicon sheet.
In a mixer with a paddle attachment, beat the shortening and brown sugar until smooth.
Add the molasses, egg and ground ginger and beat until well incorporated.
In a medium bowl, combine molasses, egg, ground cinnamon, and salt. Add the dry ingredients to the wet 1/2 cup at a time beating between additions. Continue until a firm dough is formed.
Remove golf ball-sized portions of the dough and roll into a ball. Dip the balls into some heavy cream and then coat with powdered sugar.
Place on baking sheet, leaving at least two inches for the cookies to spread. Place into the oven and bake for 10 to 15 mins.
Remove from the oven and let the cookie cool on the baking sheet for 5 minutes. Afterwards remove to a wire rack to cool completely.
