Best Banana Bread
This is our favorite banana bread recipe. It comes from "Edwardian Cooking- The Unofficial Downton Abby Cookbook" by Larry Edwards. I have been making it for years and just love it. It is not overly sweet, it allows the banana to be the star of the bake, and it is moist. Do recommend enjoying it as a snack accompanied with tea or coffee.
Prep Time15 minsCook Time50 minsTotal Time1 hr 30 mins
2 ¼ cups whole wheat flour
2 tsp baking powder
1 tsp baking soda
½ tsp salt
½ tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground allspice
½ tsp ground clove
3 bananas, peeled and mashed
¾ cup brown sugar
¾ cup olive oil
1 egg
2 tsp vanilla extract
1 cup walnuts (or any nut)(finely chopped)
1Preheat oven to 350° F. Line a 9 x 5 loaf pan with parchment paper.
2In a large bowl, whisk together the wheat flour, baking powder, baking soda, salt, and spices.
3In a mixer with the whisk attachment, beat the bananas, brown sugar, olive oil, egg, and vanilla until smooth and creamy. This will take a few minutes as you want the banana to break down.
If you do not have a stand mixer, a hand electric mixer is the next best option but a metal whisk will also do. Both options will take longer than the stand mixer.
4Add the flour mixture, in two parts, and breat on low speed until a batter is formed.
5Stir in walnuts (or any other nut you choose).
6Spoon the batter into the prepared pan, and level it.
7Place into the oven and bake 50 minutes (or until the sides break away from the pan and a toothpick comes out clean).
8Remove from the oven and let the bread cool in the pan for 15 minutes
9Remove from the pan to a wire rack and let cool until ready to slice and serve.
