Red Cabbage, Date, and Feta SaladBy Micaela SearsThis is a super easy salad but it is also incredibly unique in its flavors. It is loosely based on SmittenKitchen's Date, Feta, and Red Cabbage recipe. This salad does last well in the fridge if you do not eat it all in one sitting. It might even be better the second day after its been sitting in the dressing. If you want it to be a little on the sweeter side you can do candied pecans. Just add a tablespoon of brown sugar to them and some cinnamon.
Cheddar Broccoli ChowderBy Micaela SearsI will never forget the first time Jesse and I made this dish. We were staying in a tiny house in Indianapolis. The induction stove inside would not work for us so we ended up using a camping stove to cook all our meals. We did not have most of the proper cooking utensils. It was raining and Jesse was set up outside to cook this soup. He used a grill cover to keep it from getting wet. It took wayyyy too long to make but boy was it worth it. Jesse and I normally prefer to use a smoked cheddar cheese in this chowder. We also do not always pay close attention to the quantities for the vegetables. This soup also freezes and reheats very well if you want to make a large batch to have for many meals to come.
Fried RiceBy Micaela SearsFried rice is super delicious and also a very very easy dish to make on your own. Play around with what vegetables and protein you add to this meal. It will change the flavors of the dish a bit but it is hard to get this one wrong. Jesse and I prefer to use short-grained Japanese sticky rice. We typically use the brand Nishiki. It helps to make this an easy dish to enjoy with chopsticks.
Sweet Breakfast Buns/RollsBy Micaela SearsMaking sweet buns for breakfast is deceptively simple. Even more so if you have a stand mixer as there is no need to worry if you kneaded the dough for long enough. Jesse and I have already enjoyed three variations of these buns in the 6 months that I have been making them. All three variations are included in this recipe and I am sure more are to follow. Hopefully, soon I can enjoy a blueberry lemon version! They do store well after you have baked them, just keep them in the fridge and reheat in the microwave for a few seconds to warm up. They are still best though when they first come out of the oven. This recipe is originally from Smitten Kitchen with my own variations on the filling.
Homemade Greek Style YogurtBy Jesse TatumA delicious and simple recipe for homemade yogurt. I tend to use Siggi’s Icelandic Skyr as my culture yogurt since it is the thickest and creamiest whole milk fat yogurt I can find. Make sure that you like the taste of whatever you choose because the new batch will taste like it! And hey if you like granola there is also a recipe for that.
Best Banana BreadBy Micaela SearsThis is our favorite banana bread recipe. It comes from "Edwardian Cooking- The Unofficial Downton Abby Cookbook" by Larry Edwards. I have been making it for years and just love it. It is not overly sweet, it allows the banana to be the star of the bake, and it is moist. Do recommend enjoying it as a snack accompanied with tea or coffee.
